What's up with that arm-flicking (chi sao) they constantly and consistently do, is it just practice so that blocking, locking, and striking at close range becomes 2nd nature to them?

EXACTLY. IT'S ALL ABOUT FEELING AND SENSITIVIY OF THE HANDS. BASICALLY CHI SAO(STICKY HANDS OR FEELING THE PERSONS ENERGY) ALLOWS THE PEOPLE TO PREDICT WERE THE OPPONENT WILL MOVE AND STRIKE. IT'S A CONSTANT GAME OF TRYING TO FOOL THE OTHER PERSON WITH YOUR ENERGY AND TRYING TO MATCH THEIRS. MASTERS ARE VERY SKILLED AT KNOWING WHICH DIRECTION YOU ARE GOING TO MOVE BECAUSE THEY CAN FEEL IT IN YOUR HANDS AND BODY. Cool I do what I guess you can call traditional Wu Shu, it's traditional northern style Kung Fu, name of the school is Wu Tang Kung Fu, it's in Flushing Queens.
It's quite different from Wing Chun from what I know, but I don't know too much ab out Wing Chun, but some masters at our school incorporate Wing Chun techniques. Like in Wing Chun they are big on the center line concept, where you keep that line guarded and in your control, so when you punch, punch through the center line.
We start out with Long Fist, which is just basics for beginners, it emphasizes your structure, foundation, stretching, flexibility, there are basic punches and kicks and also other types of attacks in the Lost Fist forms we teach.
After that we do Praying Mantis or Tai Chi, I'm on the praying mantis course, which is more equipped for fighting than Long Fist. Praying Mantis is alot of assertiveness and going in, also it's alot swifter and faster.
After that we do Ba Ji which means 8 strenghts, I'm not sure too much what it's about but it's deadly as fuck. Our grandmaster mostly did Ba Ji and in his written record of all his fights of 78, there were only 10 survivors. Dude was literally sick.
And then there's mixed concepts of Kung Fu and fighting that we teach that aren't really written in stone in the curriculum. Like Chi Nah for one which means joint locking.
Check the Wu Tang threads in this section, I got one for sparring and another for forms, I'ma update them as soon as I can, I'll up some vids of me doing shit too.

And to Elcount, Chi sao is a sticking sensitivity drill. It becomes muscle memory when constantly trained..

I dont train wing chun. I have when younger. I still train some of the drills, chi sao, pak sao drills, and lop sao drills. I primarily study bruce lees art of Jeet Kune do as taught by Lee. I started in karate, then moved to wing chun, filipino kali illustrisimo, and jkd.

I think Ju jitsu is good for what it is.. Ive trained it and think it has its value.
I just dont like how people think its the end all be all of a fight.
When ur in a bar you dont want to go to the ground. what if the other guy has friends? they stomp u out.. also you ever try to put someone in a triangle and they grab ur nuts or bite u? changes how effective ground fight can be.
Every art has its place. Thats why I believe its important to be efficient and effective at all ranges

I believe as Bruce lee did in not becoming a collector of different techniques/arts.
When the shit get real, you need to be great at a few things instead of being average at many..
I always use the example of Michael Jordan, You knew at times he was going to the fade away, he was just so good at it that you couldnt do anything about it..

Yeah trapboxer raised the best point about Jiu-Jitsu, it is groundfighting/grappling where you are on the floor rolling around. The thing is BJJ fighters practice with mats on. Also when they fight against each other, THEY START OUT ON THE GROUND. How many fights in real life is there a mat? Most likely it will be concrete, pavement, hard (wood) floors you will be fighting on and it WILL HURT to keep rolling around on the ground. Also if there is broken glass and the likes on the ground that shit will kill you even more. Also how many fights in real life do you start out already on the ground? BJJ fighters need to take you to the ground, and if you don't let them do that, then you are fighting on your terrain.
I feel like there is way too much hype about it personally because Jiu-Jitsu is designed for FIGHTING ONE PERSON AT A TIME ONLY.
If you goin' up against 2 people fuck you gonna do? If you getting jumped by 4+ heads what you gonna do?
But other than those setbacks which I find huge, like trapboxer said it has value and is useful like all martial arts if applied.
